Pasta the Maltese way
Pasta recipe from a Maltese friend (real easy and super tasty!)
Ingredients:
- Pasta
- Tomatoes
- Basil
- Garlic
- Pine nuts
- Olive oil
- Gated Italian cheese
Peel tomatoes, remove seeds, cut in half and put on kitchen paper to soak down juice.
Cut tomatoes in dice and toss in big serving dish.
Add crushed fresh basil leaves, crushed garlic, pine nuts and olive oil.
Let stand for two hours in fridge.
Cook pasta, pour in serving dish and mix. Add grated cheese and serve.
